Simple Sweet Potato & Buckwheat Salad

Serves 4.


An incredibly easy and quick, five ingredient winner!

  • 1 large sweet potato, grated

  • 2 cups buckwheat groats cooked

  • 1 large red onion, thinly sliced

  • 1 tbsp olive oil

  • 1 cup cashews

  1. Place pot of water on heat and cook buckwheat as per packet instructions.

  2. Heat oil in pan, add sliced onion and sauté for 5 minutes.

  3. Grate sweet potato and add to pan, sauté until golden.

  4. Once buckwheat is cooked, add to the fry pan and mix through.

  5. Finally, add cashews then remove pan from heat and serve.


Sweet potato and other brightly pigmented fruits and vegetables are a great source of Beta-Carotene (which is a precursor of Vitamin A).

Vitamin A is a powerful antioxidant and is responsible for the maintenance of healthy cells, vision and your immune system.
