Simple, Nutritious Pasta with tomato and Spinach

All you need is:

-A handful of cherry tomatoes, halved

-Spinach (generous amount)

-2 tbsp nutritional yeast (adjust to taste)

-1 tsp-1tbsp minced ginger

-1 tsp - 1tbsp minced garlic

-1 tsp - 1tbsp Sambal oelak (chill paste)

-Pinch of salt

-1 tbsp extra virgin olive oil


-Fresh basil to serve


  1. Bring water to boil and cook pasta

  2. Place a pan over medium heat and add a dash of oil

  3. Once the pan is warm add tomatoes and sauté for around 5mins, then turn the heat off.

  4. Once pasta is cooked, drain it and add it to the pan, turning the heat back on

  5. In a separate bowl, mix together garlic, ginger, sambal and oil, to desired taste

  6. Pour mixture evenly over pasta and stir through

  7. Add two cups of spinach and stir until wilted

  8. Pour an even layer of nutritional yeast on the pasta and stir through until well-combined.

  9. Turn off heat, top with fresh basil and serve!
