
Simple Chickpea Curry

Ingredients:
1 tsp ground cumin 3 tsp curry powder
2 cans chickpeas (drained & rinsed well)
4 medium carrots
1 red capsicum
4 medium mushrooms
1 large broccoli head
Baby spinach leaves (as much as you like) 1 cup vegetable stock
1/2 cup soy milk
1 tin light coconut milk
Cashews to top (optional)
Method: 1.Chop up veggies & add to a pot over medium heat (oil optional), let simmer for a few minutes. 2.Add spices, chickpeas, veggie stock, coconut milk & soy milk to pot. 3. Reduce heat & let simmer for approx. 20 minutes or until flavours have developed & veggies are still slightly crunchy. 4. Remove from heat & serve on brown rice + top with crushed cashews.
