Satay Rice Noodles & Tempeh

For this quick, tasty meal:
Ingredients:
300g Tempeh
2 medium carrot
2 cups spinach
1 tbsp natural peanut butter
2 tbsp sweet chilli sauce
1 packet rice noodles
Method:
Preheat oven, slice tempeh into thin strips and cook for approx 15mis or until nice and crispy
Cook rice noodles in boiling water (takes only a few minutes)
Thinly slice carrot and whip together the satay sauce
When noodles and tempeh are cooked, remove from heat and add all ingredients to a bowl
Mix through the tasty satay sauce and a few cashews.
Peanut satay sauce
Simply mix together peanut butter, hot water and sweet chilli sauce.
