Loaded Baked Sweet Potato

Super simple recipe that’s going to leave you with a full & happy gut.


All you need is: •1 medium sweet potato •1 tin black beans •1 tin red kidney beans •1 brown onion •1 red capsicum •1 tbsp olive oil •2 tbsp tomato paste •Spices such as cayenne pepper, paprika, cumin, turmeric or whatever you have on hand. •Dark leafy greens of your choice (I used chard) •Avocado to top •Cashew cheese to top (optional)


All you need to do is: 1. Heat oven to around 180-220deg (depending on oven), wrap sweet potato in foil & place in oven until baked (roughly 40mins) 2. In a medium pan, add oil & chopped onion, sauté until browned then add capsicum & sauté for another few minutes. 3. Add rinsed beans to pan + spices and tomato paste, let simmer on low for 2-3mins. 4. Finally, add the chopped greens & turn off heat when they’re slightly cooked. 5. Remove sweet potato from oven, load it up with the beans & top it off with some avocado & cashew cheese (recipe in previous post).


**I could harp on about all the different vitamins, minerals, phytochemicals etc that are present in this meal - but we all know that veggies & legumes are extremely good for us, provide many health promoting & preventative aspects and greatly reduce our risks of developing many chronic diseases, so just give this meal a whirl instead :)
