Lentil and Quinoa Powerhouse Salad

A nutritious and flavour-packed recipe that can be served on it's own as a main meal or as a side complementing another dish.



 

 Ingredients:

  • 1 tbsp olive oil

  • 2 small red onions 

  • 1 tbsp garlic minced 

  • 2 cups cooked quinoa

  • 2 cups brown lentils

  • 1/2 tsp paprika 

  • 1/2 tsp cayenne 

  • 1/4 tsp iodised salt 

  • 1/2 tsp parsley 

  • 2 tbsp nutritional yeast

 

Method:

  1. Heat oil in a pan, add chopped onion and garlic and saute until browned.

  2. Add in all other ingredients to the pan, reduce the heat and mix through evenly.

  3. Let cook for approx 15 mins, stirring occasionally to develop flavour.

  4. Remove from heat and serve.
