Lentil and Quinoa Powerhouse Salad
A nutritious and flavour-packed recipe that can be served on it's own as a main meal or as a side complementing another dish.

 Ingredients:
1 tbsp olive oil
2 small red onionsÂ
1 tbsp garlic mincedÂ
2 cups cooked quinoa
2 cups brown lentils
1/2 tsp paprikaÂ
1/2 tsp cayenneÂ
1/4 tsp iodised saltÂ
1/2 tsp parsleyÂ
2 tbsp nutritional yeast

Method:
Heat oil in a pan, add chopped onion and garlic and saute until browned.
Add in all other ingredients to the pan, reduce the heat and mix through evenly.
Let cook for approx 15 mins, stirring occasionally to develop flavour.
Remove from heat and serve.
