Legumes were one of my best friends whilst road tripping around Canada’s west. They’re extremely cheap (as low as 80 cents per can), nutritionally dense and very versatile!
They’re still a huge staple in my day to day diet at home making for a very cost effective protein source.
They’re high in B vitamins, low in saturated fat, contain important minerals such as iron & calcium and also provide a slow releasing carbohydrate source.
Next time you’re at the shops, grab some black beans or lentils or chickpeas or whatever you’re feeling and give them a go! The options are endless.
