Easy Vegan Kale Pesto

The recipe will make enough for approximately 6-8 servings of pesto.



 

Ingredients:

  • 115g kale / 5 cups chopped kale

  • 4 tbsp olive oil

  • 1/2 cup + 2 tbsp nutritional yeast

  • 1/2 tsp salt

  • 1/2 lemon juiced

Method:

Simply blend all ingredients together in a food processor.

*Can adjust ratios to suit desired taste.


 

Serve with your favourite pasta, drizzle a dash of olive oil on the pasta first, then mix through with the pesto.


Top off with a sprinkling of nutritional yeast.
